Of the 23 students that started the cause I was 1 of only 4 who finished  1996 :  I started my apprenticeship as a 2nd year apprentice at the Hornsby    R.S.L. club in Sydney Australia I worked there for 12 months and    learned to work in there brasairy and also in there fine dining sections    1998 :  I started work at the Asquith Golf club as 3rd year apprentice/2nd                                                 chef, here I again learned fine dining and we did functions such as weddings and birthdays for the members. 1999 :  I left Australia for 8 months backpacking around Europe    I worked in a pizzeria in Holland for a month before finding a job as Sous Chef on the MPS Lady Anne, (a 120 berth River Rhine cruise ship) I worked there for the season. (5 months)   When I returned to Australia I spent a season in the snow field’s in southern N.S.W in a ski resort called the skirider, as there Breakfast chef.
